2 YOUNG & SPRITELY CASK No MOUTH-WATERING MELON MEDLEY This was like a melon medley salad using Cantaloupe, Galia, honeydew and watermelon mixed with papaya and mango, chopped fresh mint and a refreshing, citrusy, tangy ginger syrup dressing drizzled on top a mouth-watering proposition and wait until you ve tasted it! How about nibbling on a strawberry, lime and black pepper ice lolly or having a spoonful of chilled Bloody Mary soup? Water added the creaminess of rose and lemon fondant fancies, macarons and mini chocolate eclairs and on the palate, a passion fruit Pavlova using mango, pineapple and strawberries dusted with icing sugar and a few mint leaves. Drinking tip: To kick-start your engine 8 YEARS MARBLE YELLOW 61,0% 1ST FILL BARREL 6-June ,- 550,- YOUNG & SPRITELY CASK No LEMON CUSTARD CREAM CAKE A fruity aroma of fresh pears and apples, as well as tined peaches and dried apricots, greeted the Panel at first before sweet and tangy notes of lemon custard cream cake, lemon curd and homemade jammy dodger biscuits appeared. Like a spiced vanilla latte on the palate neat; espresso with steamed milk, rich vanilla, cardamom syrup and plenty of whipped cream and a sprinkling of cinnamon on top. With a drop of water turning into rich smooth profiteroles filled with lemon custard cream and a creamy kiwi lemon cheese cake with a pleasant hint of lingering liquorice allsorts in the finish. Drinking tip: For those sweet secret indulgent moments CHAMPAGNE LINEN 14 YEARS 58,3% 1ST FILL BARREL 1-November ,- SWEET, FRUITY & MELLOW CASK No EXOTIC FRUITS AND EASTERN SPICE The nose had perfumed tropical fruits (peach, raisins, lemon bonbons, pineapple, passion-fruit) and polished wood. The palate combined those fruits (orange, papaya, banana) with toffee donut sweetness and some wood tannins; the finish found curry, wasabi and chilli. The reduced nose detected cinnamon buns, Peshwari naan, cigarette packets and a Spanish bodega wine note. In reduction, the palate was now full of pleasant intrigue, any previous tensions were completely reconciled exotic fruits and Eastern spice, sherbet straws and chocolate raisins all wonderfully integrated an eminently enjoyable dram. After fourteen years in ex-bourbon wood, we transferred this to a second-fill Sauternes hogshead. Drinking tip: While planning adventures. 3 SWEET, FRUITY & MELLOW CASK No CAREFREE CONTENTMENT The panellists sat back in their old leather chairs and put their feet up for a well earned rest whilst savouring the warming aromas of baking fruit cake with strawberries, pineapples, walnuts and marzipan combined with cinnamon, ground cloves, golden syrup and hard chocolate icing. There was a fruity zing of three fruit marmalade and lemon sherbet with the light oiliness of linseed and also balsamic vinegar on a tropical fruit salad. Then more sweetness from chocolate chip cookies still warm from the oven, sugared almonds and perfumed tobacco with a gratifying finish of grape seed tannins and fresh coconut. Drinking tip: Whilst preparing for Christmas. 23 YEARS 20-April-1993 PADDINGTON S MARMALADE REFILL BARREL DK 36 BOTTLES 675,- 53,8% 1.000,- SWEET, FRUITY & MELLOW CASK No TEA-ING OFF TIME This felt like being given a hot cup of herbal tea; peppermint and spearmint with a little cinnamon and ginger thrown in and plenty of honey added for sweetness a real soothing experience for the nose and throat. An enticing combination of peppery spiciness as well as salty caramel on the tongue at first, then earthy tobacco notes appeared and it all finished with a refreshing watermelon and honeydew sorbet. With water like cinnamon, clove and ginger spiced sweet apple butter on toast and the taste a delicious ginger, lemon and honey tea with pomegranate pistachio Turkish delight. Drinking tip: Would you like a cup of tea to go with that? 19 YEARS SHINY PALE GOLD GLASS BEADS 56,9% REFILL BARREL 15-August-1997 SWEET, FRUITY & MELLOW CASK No FRUITY, STICKY, YUMMY Initially lifted and sweet with dried cherries, red wine gums and floral connotations of Turkish delight, lavender and rose tea. The tea developed into earl grey with carefree quantities of brown sugar giving a viscous and sticky mouth feel followed by the sweet fruitiness of mango coulis and strawberry jam on hot buttered crumpets. Water released the fresh woodiness of a pine forest with wild flowers, pink wafers with vanilla ice cream and a clean finish of peppermint and mint humbugs. After spending 10 years in an ex-bourbon hogshead it was transferred to a virgin oak hogshead for the remainder of its maturation. Drinking tip: Whilst on a sunny stroll through the woods. 4 SPICY & SWEET CASK No REAL FINESSE Elegant, delicate and fruity, were just some of the adjectives used nosing neat and we described it like pears poached in a dessert wine with honey and vanilla and a hint of ginger and cinnamon. I could smell this all day but we eventually tried it. Wow! - well balanced with fruity apple notes combined with oaky, slightly drying black tea and some spice in the form of nutmeg and pepper. A drop of water and we had mixed nut and honey baklava and on the palate a juicy fruit salad with custard and a never-ending lemon-mint sorbet finish. Drinking tip: Make some time for this one! 20 YEARS PALE GOLD STAINLESS STEEL WATCH 60,5% REFILL HOGSHEAD 23-April-1996 DK 30 BOTTLES 1.100,- 900,- SPICY & SWEET CASK No EASTERN PROMISE We were transported to a Thai street food market with a never-ending variety of fruits as well as a wide selection of dishes on offer all smelling of exotic spices being cooked right in front of us. The stall we stopped at served barbequed spice-rubbed chicken with a kumquat-lemongrass dressing. We decided to have a plateful of it and the mouthfeel was a delicate balance between sweet and spice with a light smoky finish. After some water we were drawn to aromas of rice noodles, shrimp and scallion rolls which we dipped in a soy and oyster sauce - weird but wonderful! Drinking tip: Open your mind and you open your life 14 YEARS PALE SUMMER SUNSHINE 56,8% REFILL HOGSHEAD 1-October-2002 SPICY & SWEET CASK No LOVE AT FIRST SNIFF The nose was love at first sniff spun sugar, golden meringues and manuka, dried mango and marmalade; toasted coconut, hazelnut and shea butter, polished antique furniture and lastly, rose-petals and nasturtiums. The silky smooth palate was comfort in a glass ginger fudge, brandy snaps, strawberry jam, acacia honey, salted caramel, sandalwood and chocolate florentines. The reduced nose had orange oil, sichuan pepper, marzipan, scented candles and aromatherapy sessions. The palate well, we had so many words (amazing, heavenly, integrated) but agreed that none did it justice. After 26 years in exbourbon wood this was transferred to a virgin oak hogshead. Drinking tip: For sweet dreams or a coming home dram after a long journey. 26 YEARS GOLDEN SYRUP IN THE TIN 54,1% VIRGIN OAK HOGSHEAD, HEAVY TOAST/MEDIUM CHAR 5-February-1990 DK 36 BOTTLES 750,-
5 JUICY, OAK & VANILLA CASK No FALLING IN LOVE IN AN INSTANT Fresh, lively, sweet, charming, attractive and very engaging, might even be love at first nose. Aromas of custard caramel doughnuts, vanilla Chantilly cream, honey poached peaches and fresh strawberries with mint ice cream - we really wanted to get to know this one. Beautiful mouthfeel; like a tropical fruit medley underneath the palm trees at sunset with sweet crunchy honeycomb covered in slightly bitter dark chocolate melting in your mouth. Let s discover this further with a drop of water; even sweeter, even smoother, even more succulent if that is at all possible! - and a teasing little spice tingled our taste buds. Drinking tip: Just the two of us at sunset 14 YEARS VIRGIN OLIVE OIL 57,9% 1ST FILL BARREL 11-December-2001 OILY & COASTAL CASK No MUTED HEBRIDEAN SMOKE The nose was immediately promising gentle smoke drifting over Hebridean beaches, apricot jam, blossom honey, whinscented soap, menthol tobacco and a comforting leather sofa. The sweet, viscous palate had toffee, sweet coconut and mussels, with fantastically muted smoke (wood smoke and aromatic cigars) the finish and odd mixture of sherry vinegar and lemon zest. On the reduced nose jam sponge, splashes of citrus and enjoying Coquilles St Jacques among the gorse bushes. The palate now lemon squeezed on calamari, key lime pie and salty Twiglets. After 27 years in ex-bourbon wood this was transferred to a first-fill charred red wine hogshead. Drinking tip: With seafood. 28 YEARS LIGHT APRICOT GOLD 48,3% 1ST FILL CHARRED EX-RED WINE HOGSHEAD 27-September-1988 DK 30 BOTTLES OILY & COASTAL CASK No NAUTICAL BUT NICE The ship was ready to set sail with its caramel wafer decking freshly varnished with vanilla honey and masts made from candy canes with rice paper sails tethered with liquorice rope. Setting out onto the ocean of dandelion and burdock we passed chalk cliffs dusted with icing sugar beside lemon bonbon rocks. The minty fresh maritime air brought memories of cockles and muscles whilst from the galley below came the tummy rumbling aromas of potatoes and sweet parsnips roasting with rosemary, honey and thyme, smoked sticky toffee pudding and pancakes with fresh lemon juice. Drinking tip: The perfect ship wrecked dram after being washed ashore on a paradise island. 9 YEARS HEAVENLY GOLD 59,0% REFILL BARREL 15-December-2006 DK 36 BOTTLES 725, ,- 675,-
6 LIGHT PEATED CASK No HEBREDIAN DREAMS We were transported on to the deck of a coal fired steam puffer feeling the cold salty sea breeze across our faces and warming our hands on a mug of Gaelic coffee or mulled wine spiced with cinnamon and cloves. Lunch was served and we enjoyed griddled scallops with smoked, sweet chilli sauce and smoked salmon crabmeat salad. With a drop of water we went ashore on a now beautiful sunny late afternoon at a sandy beach on the western shores of the Outer Hebrides with the machair in full bloom and watched the sunset with sweet, slightly smoky, creamy lavender lobster bisque. Drinking tip: Desert island dram 20 YEARS CORN MARIGOLD 56,5% REFILL HOGSHEAD 5-April-1996 PEATED CASK No TWO WHEELED BEACH CRUISER Cycling along the beach we passed an old shipwreck with its weathered and tar-covered timbers that sat amongst the glistening rock pools and dried seaweed. The sweet smell of sticky pork ribs on a bbq hung in the air along with smoked rhubarb crumble with whipped cream and roasted limes. Suddenly my tire punctured on the sharp edge of an oyster shell, releasing a sweet innertube aroma. We sat down on a rock and opened a packet of salted almonds and some sweet smoked salmon, and as a rain shower started we relaxed whilst watching patterns being made by the raindrops in the sand. 9 MANAGERS CORNER TOMATIN DISTILLERY I anledning af at det er lykkes at få en Tomatin aftapning til Danmark, kommer her en kort profil beskrivelse af destilleriet. Da whisky industrien boomede i slutningen af 1800 tallet, blev der bygget mange nye destillerier. Mange af dem lukkede igen efter Pattison skandalen den 7. december Af alle de destillerier der blev bygget på det tidspunkt, er det kun 24 af dem der producerer whisky den dag i dag. Tomatin var netop et af disse destillerier, idet det blev bygget i 1897, og selvom de holdt ud til 1906 før ejerne gik konkurs, så eksisterer det som bekendt stadig. Man mener dog at der har været en del illegal destillering på området omkring Tomatin før Tomatin er gælisk for enebær bakken, og netop enebær buske var et foretrukkent brændsel for illegal destillation, da det ikke udvikler (særlig meget) røg. Selve placeringen af destilleriet er også regionsmæssigt interessant. Det ligger på grænsen mellem Speyside, West Highlands & North Highlands. Tomatin blev det første destilleri der kom på asiatiske hænder, hvilket skete i 1986, da Takara Shuzo købte 80% af aktierne, og de sidste 20% blev købt af Okura & Co. I dag er Tomatin blandt de maltdestillerier i Skotland med den største produktion, men deres storhedstid skal spores tilbage til perioden hvor de udvidede fra blot 2 til 23 destillations apparater. Det gav dem muligheden for i 1970 erne at producere 12 million liter whisky om året, og Tomatin var dermed det destilleri i verden med det næststørste output kun overgået af Hakushu. I dag har destilleriet et 8 tons mæskekar i rustfrit stål, 12 gæringskar ligeledes i rustfrit stål hvor gæringstiden svinger mellem timer. I øvrigt var Tomatin de første i verden til at anvende en såkaldt Lauter Mash Tun. En Lauter Mash Tun adskiller sig fra en almindelig Mas Tun, ved at have roterende knive der skærer i malten under mæskning. I 2013 satte besluttede man sig på Tomatin for at ca 2% af destillatet skulle være tørverøget til omkring 18 ppm.
