Designer Aurélien Barbry has created a collection with equal focus on function and design, expressed in a classical look with sharp curves and ergonomic handles. GIFTS THAT KEEP ON GIVING Menu is helping to raise money for a Save the Children project in Greenland through the sale of selected Menu design thermo cups, candleholders and oil lamps. Singer Julie Berthelsen and actor Nikolaj Coster-Waldau are behind the motif design, inspired by the Sirius children and youth club in Qaanaaq. Julie Berthelsen s illustration is about balance and finding inner strength, while Nikolaj Coster-Waldau s illustration reveals melting ice crystals, a broken shell and the footsteps of a child, signalling the child s newfound freedom on having broken out of the shell. Umahro Cadogan I would describe myself as something of a food freak. Long before I could peer over a kitchen worktop I cooked for pleasure, but when I contracted chronic gastroenteritis at the tender age of 19, my diet assumed an even more central role in my life. A couple of years later the doctors gave up trying to cure me and in a much weakened condition I looked forward to the unsavoury prospect of life as a disability pensioner. But instead of throwing in the towel, I began to put my knowledge of biology and biochemistry gleaned from an International Baccalaureate (IB) to good use. I sought knowledge about diet and health for body and mind and quite literally ate my way to good health. Since then I have devoted my life to passing on knowledge about health to others and have written the Kitchen Revolution cookbooks that are so well-known in Denmark. Fruit is beautiful in itself, and thus deserving of elegant presentation. And so designer Niels Römer has created a fantastic fruit bowl exclusively for Menu. The bowl is shaped like a large, soft drop of paint, captured in the moment it strikes the table and shatters into a spectacular burst of colour. It is made from silicone which has the appearance of porcelain but feels surprisingly soft and pleasing to the touch. The collection showcases a range of exciting colours including Carbon, Spring leaf, Snow white, Storm blue, Neo purple and Neo red. Frugt er skønt og fortjener at blive præsenteret flot. Te har med sine sunde antioxidanter og næringsstoffer for alvor vundet indpas over det meste af verden, og te kan både forebygge og bekæmpe sygdomme som kræft og influenza.

8 14 Tea time Tea time 15 Most people are aware of the health benefits of tea, and that has brought tea back into the limelight. Refreshing, soothing, healing, and it may prevent cancer. That s just a small selection of the beneficial qualities inherent in tea. Naturally, not all at the same time: Tea is found in countless varieties, and it is the method of production and the brewing time that determine the effect of the individual tea. Tea can positively influence your mind and body. Most people are aware of the health benefits of tea, and that has brought tea back into the limelight. At the same time society has undergone an attitudinal change, prompting most of us to seek out quality in what we eat and drink, explains owner and tea expert Alexis Kaae of Simply Tea. So tea is no longer just tea, but a warm pleasure that we partake of according to our needs. The choice is huge, and the types of tea vary greatly in terms of flavour, effect, and appearance. That being said, all tea comes from the same plant, Camellia Sinensis, but the individual varieties are picked, processed and prepared in different ways, lending variation in both flavour and appearance, as well as nutritional value. Classic black Much of what we consider as real tea in the Western world is the traditional black tea. For hundreds of years it was the only tea variety enjoyed for afternoon teatime. And Europeans were by far the only ones drinking it! Flavours such as berries and spices were often added to black tea both to extend shelf life and camouflage the bitter aftertaste caused by the months-long journey from Asia to European tables. In recent years black tea has seen a great deal of competition from other varieties, but many people mistakenly believe that black tea does not contain the nutrients and healing properties of other types. In fact, black tea contains the neurotransmitter acetylcholine, which helps to prevent Alzheimer s disease, and like other teas it is rich in antioxidants, which are thought to combat cancer. And if that s not enough, black tea also has a calming effect and is particularly helpful in warding off stress. Green and rewarding Green tea began to garner serious attention in Europe in the 1980s, and was responsible for the decline in the popularity of black tea. Green tea is in fact a genuine tea, in that it undergoes the least amount of processing in the form of drying and steaming. Thanks to these natural methods, green tea is rich in minerals and nutrients, and for thousands of years Chinese medicine has relied on its health-giving properties. The healthful effects of green tea are at the root of its popularity in the West, and the flavonoids it contains are said to have a positive effect on cardiovascular disease. Tea also has qualities that calm and soothe us, and which can reduce high blood pressure. Green tea has a relatively short shelf life and should be enjoyed fresh in order to reap its health-giving benefits. The popular white Although green tea is still popular with tea drinkers, white tea is taking precedence in tea cups worldwide and with good reason, because all of the healthy properties are intact in white tea. And the white variety is very exclusive, in that it consists solely of the fine white hairs on the unopened buds of the tea plant, and picking is carried out only a few days a year. Bursting with amino acids and antioxidants, white tea is especially effective against fever thanks to its antibacterial properties. White tea is also recommended to combat gum infections and paradentosis, and the beauty industry often employs white tea extract in its products to fight wrinkles. Fake but fiery The Rooibos variety, also known as red tea, is not considered a real tea in the eyes of many tea lovers. Rooibos is more of an herbal tea made from the needle-like leaves of a bush found in South Africa, and not the Camellia Sinensis plant like other teas. This African tea has attracted a large number of fans both in Europe and the USA in recent years. Rooibos is exceptionally healthy and rich in Vitamin C, iron, and calcium. It s easy on the stomach and makes a good alternative to green tea, which many people find to be too harsh and bitter. As Rooibos does not contain caffeine, it is popular with many pregnant and nursing mothers and is thought to increase breast milk production. And many tea drinkers who have problems sleeping prefer to drink this caffeine-free African variety. The next trend While quality-conscious tea drinkers are embracing the benefits of white tea, the next tea trends are slowing beginning to emerge. At Simply Tea, Alexis Kaae predicts that Oolong and pu-erh tea will soon enjoy a warm welcome on the tea scene, not least because they are good for the digestion and have a slimming effect. Pu-erh tea in particular has shown its ability to break down fats and oils, partly due to microorganisms and bacteria used in the fermenting process. And pu-erh tea, unlike green tea, is best enjoyed after undergoing a lengthy aging process most commonly 9-10 years, but some types are aged between 50 and 60 years. The tea s active properties help to purify the body and are especially beneficial for the kidney and liver. Opkvikkende, beroligende, kræftforebyggende og healende. Teen blev ofte tilsat smagsvarianter som bær eller krydderier for at forlænge holdbarheden og kamuflere den bitre smag, som den månedslange rejse fra Asien var skyld i. Den sorte variant har de seneste årtier fået stærk konkurrence af andre tetyper, men mange tror fejlagtigt, at sort te ikke er næringsrig og helbredende. Teen indeholder signalstoffet acetylcholin, som forebygger alzheimers sygdom, og er som de andre tetyper rig på antioxidanter, der har ry for at bekæmpe kræft. Desuden har den sorte te en beroligende effekt og er særlig god mod stress. Sundhedseffekten har klart været roden til den grønne tes popularitet i Vesten, og indholdet af såkaldte flavonoider har en positiv effekt på hjerte-kar-sygdomme. Teen indeholder også stoffer, der får os til at slappe af og er særlig god mod højt blodtryk. Grøn te har en kort levetid og skal drikkes frisk for at holde på de helsevirkende næringsstoffer. Den populære hvide Selvom grøn te stadig er populært hos tedrikkere, har den hvide variation taget over. Hvid te fyldes i øjeblikket op i utallige tekrus og med god grund, for alle de sunde stoffer er intakte. Den hvide te er særlig eksklusiv, fordi denne tesort udelukkende består af de midterste topskud fra planten, og plukningen foretages kun få dage om året. Masser af aminosyrer og antioxidanter gør den særlig effektiv mod feber, da de spæde bladknopper er bakteriedræbende. Den anbefales også mod tandkødsbetændelse og paradentose, og skønhedsindustrien blander hvid teekstrakt i produkter til bekæmpelse af rynker. Falsk men fyrig Sorten Rooibos, også kendt som rød te, er i mange teentusiasters øjne slet ikke en rigtig te. Rooibos er snarere en urtete fremstillet fra en nåletræslignende busk fra Sydafrika og er ikke som de andre tetyper en del af planten Camellia Sinensis. Denne afrikanske te har imidlertid trukket en bred fanskare til sig i både Europa og USA i løbet af de seneste år. Teen er særlig sund med et rigt indhold af både C-vitaminer, jern og kalcium. With four parts that can be combined, Menu s serving and carving set provides an array of possibilities for presenting any kind of meal optimally. When you have planned a perfect dinner, carefully selected fresh ingredients, spent hours in the kitchen and designed an attractive table setting, it would be a shame if the cold starter was served lukewarm or the tablecloth was stained by dripping meat juices from the serving dish. To succeed, one needs more than a standard serving dish, but what? Menu and the designer duo Norm, sat down to solve this problem. The result is a multifunctional serving and carving set, consisting of a melamine tray, a bamboo board, a porcelain dish and a cooling pad, which all can be used individually. Put the cooling pad in the freezer and afterwards place it between the tray and dish. Suddenly, the serving set is transformed into a cooling tray that can keep desserts, sushi, lunch dishes and starters fresh throughout your meal! Combined with the attractive bamboo board, the tray is converted into a carving set equipped with silicone pads so that it remains steady on the table and in the tray, while a large cut out cross in the middle keeps the roast in place and channels meat juices down in the tray. The series consists of 7 parts that can be combined as needed in innumerable ways. The diameter of the set is approx. 28 cm and, naturally, is supplied in a Menu gift box. The set is developed so it fits together in many ways and in so doing fulfils many of the needs in connection with serving in a modern kitchen. All details have been thought about and the simple, Scandinavian mode of expression hides several functions and refinements. In our busy daily lives balancing work, family and leisure, often there isn t much time left over to prepare healthy food for our family meals. Qualities such as fast and easy to prepare become priorities. But the desire for healthy food can become reality with the help of the Menu Steam Tower, a modern steamer that quickly and easily assists you in preparing healthy, tasty and nutritional meals served in beautiful porcelain bowls. Straight from the oven. Many of us don t have the time and energy it takes to make a healthy meal after a long day at work, but the Steam Tower makes it easy. You simply gather all of your ingredients in one bowl instead of using one pot for the rice, a wok for the vegetables and a pan to fry the meat, explains health guru and chef Oscar Umahro Cadogan. Five fireproof porcelain dishes two lids and three dishes form the basic cornerstone of Steam Tower. The pieces stack on top of one another and are placed over water inside the oven. When the water begins to steam, it penetrates the porcelain layers and steams the ingredients, keeping the nutrients where they belong in the food as it cooks. Steaming food is a delicate preparation method that maintains the flavour of the vegetables. This allows you to experience the food in a very pure form as opposed to boiled vegetables, where the hot water simply drains much of the nutrition right out of the food, says Oscar Umahro Cadogan, who compares boiling to taking a bath: The result is wrinkled skin, while a steam bath provides the body with moisture and warmth. Making the most of flavour Steam Tower features lids at the bottom and the top, as well as a sealed bowl and two dishes with holes in the base to allow the vegetable and meat juices to add flavour to the layers below. I prefer the vegetables at the top since they usually require less cooking time and are put in the oven last. Pasta, rice or bulgur should go at the bottom, and I place the meat in the middle so it drips juices and flavour onto the carbohydrates in the lowest layer. This method really helps to make the most of Cut a round piece of baking paper and place it in the tier with holes. Place the 4 pieces of cod/halibut in the tier and spread with the miso mixed with soy sauce, finely chopped garlic and a little chilli, salt and pepper. Jeg foretrækker grøntsagerne øverst, da de oftest skal have kortest tid og derfor bliver sat i ovnen til sidst. Nederst har jeg pasta, ris eller bulgur, og i midten sætter jeg kødet, som drypper saft og kraft til kulhydraterne i bunden. På den måde udnytter jeg al smagen, siger sundhedseksperten og understreger, at damp som tilberedningsmetode er mere miljøvenlig, da alt tilberedes i ovnen på samme tid. Oscar Umahro Cadogan opfordrer også til at udforske og eksperimentere med Steam Tower, da både fjerkræ, skaldyr, fisk og udskåret kød som lammebov eller gullasch er særdeles velegnet at dampe. Sammen med rodfrugter, grøntsager og ris, pasta, bulgur og linser kan man sammensætte sund mad i uendelige varianter. Det der ikke bliver spist ved middagsbordet, kan placeres i køleskabet i Steam Tower med låg på toppen til dagen efter. Nemt, hurtigt og sundt.

Norwegian salmon (raw) 2 lemons 2 tbsp. rapeseed oil 1 tbsp. lovage, finely sliced 2 packs pea shoots 1 handful ground elder Salt and pepper 2 large veal schnitzels 2 tbsp. mustard 4 slices Parma ham 8 sage leaves 2 packs cherry tomatoes (ripe) 2 shallots, finely chopped 1 clove garlic, finely chopped 1 bunch spring onions, sliced into 2-3 cm long pieces 2 tbsp. olive oil 200 gr. strawberries without stalks ½ bunch rhubarb cut into 4 cm pieces 1 handful macaroons 200 gr. cane sugar Grated peel of 2 limes 1/4 litre double cream 200 gr. mascarpone 1 vanilla pod 2 tbsp. icing sugar Lemon balm 1 tbsp. Flaked hazelnuts Cut the salmon into 2 x 2 cm squares. Fold together with lemon juice and rapeseed oil; add the lovage, salt and pepper. Bake for 5-6 minutes (must be slightly raw in the middle) When serving, cover the salmon with fresh pea shoots and ground elder (bean sprouts), sprinkle a little extra lemon juice and rapeseed oil (bake in the tier with holes covered with baking paper cut to size. Remember the plate). Cut the pounded veal schnitzels into approx. 8 x 8 cm pieces spread with mustard. Place a slice of Parma ham on each with 3 sage leaves. Roll up and hold together with a wooden toothpick Place the veal rolls into a tier without holes. Place on top the 2 packs cherry tomatoes sprinkled with finely chopped shallots, spring onions as well as 1 finely chopped garlic clove. Sprinkle it all with olive oil and bake for 20 minutes in the oven at 200 degrees centigrade. Remove the toothpicks and serve the dish with perhaps boiled gnocchi folded together with freshly cut parsley or a bowl of new potatoes. Perhaps even with just a fresh green salad. Place the strawberries and rhubarb together with the sugar and coarsely crushed macaroons. Add the grated peel of the lime bake for 5-7 minutes until the surface becomes slightly brown. Leave it to stand so it is served slightly warm. Service with a cold crème of 1/4 litre double cream whisk together with 1/4 litre mascarpone and 1 vanilla pod, 2 tbsp. icing sugar. Garnish with lemon balm and sprinkle with hazelnuts. (This is baked in the tier with holes, covered with baking paper cut to size. Remember the plate) The top When Steam Tower is in the oven, place a lid on the top to keep in the steam.
