Highlands Balblair Denmark Single Cask Distilleri: Balblair Casks: Refill Remade Sherry Hogsheads Age: 16y Noter fra Juuls.dk: Smuk nøddebrun glød, med antydninger af cedertræ og citrus i duften. Tørt løv og pibetobak er pakket ind i søde sherrytoner. eftersmagen er maritim med svag røg.

Campbeltown Springbank 15 Year Old Distilleri: Springbank Casks: 100% sherry Age: 15y Noter fra springbankdistillers.com: Like a storm gathering of the Kintyre coast, dark and ominous, yet tastes so good. The richness comes from the high percentage of sherry casks used in maturation. This is a truly classic Springbank, best enjoyed after dinner, or with your favourite cigar. Nose: Sherry, dark chocolate, christmas cake, almonds, toffee and oak. Palate: Creamy, raisins, dark chocolate, figs, marzipan, brazil nuts and vanilla. Finish: Oak and sherry notes sustain, mingling with hints of leather. Island Arran Fino Sherry Cask Finish 8 Year Old Distilleri: Arran Casks: Matured for 8 years in an ex-bourbon cask, this whisky enjoyed a further 9 months to finish in a Fino sherry cask from Valdespino. Bottled at: 50% Age: 8 Years Maltwhiskyen i denne aftapning har først modnet i 8 år på traditionelle egefade. Herefter er maltwhiskyen flyttet over på friske Fino sherryfade fra Jerez i Spanien, hvor den har modnet yderligere i 9 måneder. Fino sherryfadene stammer fra Valdespino, en af de ældste sherrybodegaer i Jerez og kendt verdenen over for høj kvalitet. Fino sherryfadene har tilført maltwhiskyen en frisk og nøddeagtig og let salt karakter.
Farve: Gylden sirup. Duft: Frisk med en tung duft af mandler, vanille og krydderier. Smag: Den samme tætte sødme fra næsen går igen i smagen. Hurtigt bliver smagen sprød og delikat tør. Mandler og hasselnødder afslører modningen på Fino sherryfade. Eftersmagen er kompleks og let maritim med en smule blød vestkyst havsalt. Kommentar: Alt det bedste fra Fino sherryen går igen i denne maltwhisky. Sprøde nødder og mandler og delikat salt og sødme gør denne Arran Fino sherry cask finish til den perfekte aperitif whisky. Lowlands Chieftain s Rosebank 1990 18 Year Old Distilleri: Rosebank Casks: Sherry Butt #614 Age: 18 Years Noter fra ianmacleod.com: Nose: Candy floss, calamine, light smoke. Japanese grapes. Body: Rich, smooth, light wood, peppery dried boar ham. Finish: Rich, malty and minty with some citrus essence Meget delikat blanding af frugt, chokolade og sherrysødme. Smagen er fyldig og fed, med rige toner af marcipan, chokolade, søde urter og sherrysødme i perfekt balance. Eftersmagen er lang, blød og kælende. Dette er Rosebank når det er allerbedst. Speyside Balmenach 32 Years Flying Cows Distilleri: Balmenach Casks: First Fill Sherry Butt Age: 32 Years FARVE Mørkt teaktræ.
DUFT Fyldte chokolader med Jamaicarom, brændt nougat og subtilt egefad med runde Oloroso kanter. Toner af kardemomme, orangelikør og krokant. SMAG En varm sødme og fantastisk dyb smag af gammel vellagret Olorososherry og Speyside. Chokolade, Fragilitekage, nepalesisk Chai the og associationer af gammel cognac med orangekanter, mødes i perfekt balance. Egefadet brænder forsigtigt igennem hen mod slutningen, sammen med Bismarcksklumper og Flødetabletter. En karakter af blød røg og lidt lakrids fornemmes til sidst. Eminent langsomt aftagende finish, med skøn harmoni mellem sødt, bittert og svag røg. KOMMENTAR Flying Cow 9b - Balmenach 1977 er den neddroslede udgave af Flying Pigs 9a - Balmenach 1977. Stilen er mere blød og elegant end den stærke fadstyrke version. Dette er en maltwhisky for whiskyconnoisseurs der værdsætter klassiske konservative dyder og efterspørger vellagret Speyside Maltwhisky. Islay Ardbeg Uigeadail Distilleri: Ardbeg Casks: Sherry Bottled at: 54,2% Age:? Named World Whisky of the Year in Jim Murray s Whisky Bible 2009. Ardbeg Uigeadail takes its name from the mysterious loch which supplies the peat-laden water used to make Ardbeg. Noter fra Michael Jackson: Nose: Intensely smoky. Dry, clean, tangy smoke. Like standing downwind of the barbecue while steaks are char-grilled on the beach Palate: Firm, very smooth, then explodes on the tongue. Finish: Hot. Alcoholic. A shock to the system.
Om Sherry Fade Fra http://www.maltmadness.com/guide-05.html Almost every cask that's used for the maturation of whisky has been used before in the production of BOURBON or SHERRY. About 90% of all the malt whisky that is distilled in Scotland ends up in casks that contained bourbon before they were shipped from the USA. That makes a lot of sense, because American law dictates that a bourbon cask can be used only once for the production of bourbon. Sherry casks are usually larger than bourbon barrels and come in several different sizes. A HOGSHEAD holds 250 liters, while a BUTT is twice that size with 500 liters. Distilleries sometimes use other sizes (like the 450 liter PUNCHEON ) as well, but the vast majority of the casks are still barrels, hogsheads & butts. Just like the discovery of the significant benefits of maturation in oak casks, the magic of sherry was uncovered by accident. Scotland relied on oak trees from the forests of England for a long time, but at some point distilleries needed to find an alternative source for their casks. Sherry (fortified Spanish wine) was once very popular on the British isles. Actually, it still is - the UK alone takes care of a whopping 29% of the world's sherry consumption, with Holland coming in a close second with 27%. The sherry bodegas use Quercus Robur for their casks - i.e. European Oak. There are many different 'types' of sherry, which means there are different types of sherry casks as well. To name just a few of them; Fino, Oloroso, Manzanilla, Amontillado, Pedro Ximénez, etc. Are you dizzy yet? No? Good - then you might like to learn that 'Pedro Ximénez' is also the name of the grape species used for sherry. In fact, only two species of grape are used for the production of sherry; the other one being 'Palomino'. Compared to the 1970's, sherry consumption in Holland and the UK has dropped off dramatically. As a results, production of sherry dropped as well - and therefor availability of casks. Anyway, sherry used to be shipped from Spain to England by the cask. Alcoholism was running rampant in those days, so empty and discarded sherry casks were littering the 19th century Scottish landscape very much like empty beer cans and bottles are doing today. In one of the world's first recycling initiatives the Scots started picking up those second hand sherry casks to use them again for the maturation of their whiskies. And then use them again & again & again - waste not want not... These days, both bourbon and sherry casks are used more than once. A sherry cask that has seen four or five fillings is no exception. When a cask has held and aged whisky for the very first time it's called a FIRST-FILL cask, after a second filling with fresh whisky it's a SECOND-FILL cask, etc. With each filling less and less character is transferred to the whisky. Depending on the pedigree of the cask it will become 'exhausted' after a couple of fillings.
