Usquebae an blankets warm SPICY & DRY CASK NO. 58.28 DKK 775 Refill Barrel Date distilled 21-April-2005 13 years Strength 59,7% Speyside Deveron Outturn DK 24 bottles If you sniff too deeply, the dry, spirity nature is like a frozen thistle up the nose, but treated with caution it gives pears and toffee apples, gingerbread, juniper bushes and gin; a warm blanket of laundry and blotting paper. With water it settles nicely pot pourri, snuff, ginger snaps, Blackpool rock and raisins. The initial neat palate is sweet and tart apple strudel, lemon peel, fresh fruits; with pepper, chilli and cinnamon heat on the finish. The reduced palate is even quite civilised and tasty; jelly beans, spearmint Mentos and chalky lavender sweets just a hint of cheek-tingling wasabi at the end. Selfperpetuating perfection OLD & DIGNIFIFIED CASK NO. 7.199 DKK 1.400 Ex-Bourbon / 1. Fill PX Hogshead Date distilled 15-June-1990 27 years Strength 52,3% Speyside Lossie Outturn DK 18 bottles Unsure exactly where the dram either started or concluded we found ourselves spinning in a whirlpool of complexity. Dandelion and burdock merged with liquorice and vanilla pods in rippleless layers as Turkish delight became shrouded by milk chocolate. Suggestions of darkness introduced prunes, fig rolls and cinnamon swirls whilst creamy viscosity encased creme catalan and honey on custard. A gentle swirl of plum tart on an old oak stave moved towards gooseberry and ginger jam to maintain a lively vigour before ending back where we started with liquorice and vanilla pods. After spending 25 years in an ex-bourbon hogshead this was transferred to a 1st fill ex-pedro ximinez hogshead for the remainder of its maturation.
Blended Malt Lightly peated CASK NO. Peat Faerie #4 DKK 525 1. Fill Barrels & Refill Hogsheads Date distilled 12-October-2010 7 years Strength 50,0% Islay & Speyside Outturn DK 60 bottles The nose enticed with vanilla, pineapple and white chocolate, while a sweet dustiness reminded one panellist of chalk board dusters. We found a distinct maritime edge, smoked salted butter and old fashioned straw pressed cider. The peat smoke lead on the palate accompanied by salty peanut brittle, caramelised red apples and watermelon jelly. A splash of water brought toasted (borderline smoky) coconut, while soft minty notes gave way to lightly smoked white fish. The palate was slightly drying at first with a building sweet intensity. Flakes of sea salt were lightly sprinkled onto tropical fruit making for a sweet and savoury crescendo fitting of this regional marriage. Lemon & coriander meander Single Spirits CASK NO. GN1.3 DKK 675 2. Fill Barrel Date distilled 2-August-2017 NA Strength 57,8% Glasgow Outturn DK 18 bottles Aromas at full strength start with juniper to the fore along with fresh and zesty dried lemon peel and wet cut grass. It s spicy with coriander seed, anise and tree sap. Tantalisingly sweet too lemon meringue pie with melon and peach and gentle herbs in the background. Take a sip and it is lively and drying (lemon peel and coriander seed), sweet with a pleasing bitterness and a lemon meringue pie lingering finish. Tonic water brings out a refreshing mix of citrus, bitterness and sweetness. It s aromatic with juniper, aniseed and coriander seed with gentle pepper warmth and sweet and juicy like a subtle fruit salad.
